The griot keeps the story.
The griot feeds the people.
In the West African and Haitian tradition, the griot is the keeper of memory — the one who carries the names, the songs and the victories, so a people never forgets who they are.
In Haiti, the word holds a second meaning: griot, the dish — pork seasoned deep with epis, cooked twice, fried to a crackle and crowned with pikliz. It is the plate at the center of every celebration.
This restaurant is named for both — the storyteller and the dish. Every order is a page. Every meal, a retelling.
