Our Story

Not just a restaurant.
A remembering.

In Haiti, food is how a people kept their history when history tried to take everything else — recipes carried in memory, seasoning as inheritance, every feast a small act of survival. Griot Gardens cooks that history, plate by plate, in the heart of Houston.

01
Chapter One — The Name

The griot keeps the story.
The griot feeds the people.

In the West African and Haitian tradition, the griot is the keeper of memory — the one who carries the names, the songs and the victories, so a people never forgets who they are.

In Haiti, the word holds a second meaning: griot, the dish — pork seasoned deep with epis, cooked twice, fried to a crackle and crowned with pikliz. It is the plate at the center of every celebration.

This restaurant is named for both — the storyteller and the dish. Every order is a page. Every meal, a retelling.

Chapter Two — The Maroon

The man who broke his chains.

His name is Nèg Mawon — the Maroon. He tore off his chains, set a conch shell to his lips, and blew the call that gathered a scattered people toward freedom.

His silhouette stands in Port-au-Prince as Haiti's emblem of resistance. He has no single name, because he is every Haitian who ever refused to stay bound.

You will find him here the way memory works — woven quietly into the background of everything we serve. Always present. Never finished.

1804
Chapter Three — The Soup

A soup that tastes like freedom.

Under slavery, this golden squash soup was forbidden to the enslaved — reserved for the masters' tables. On January 1, 1804, the day Haiti became the first free Black republic, the newly free cooked it for themselves.

Every New Year's morning since, Haitians everywhere eat Soup Joumou to remember what liberation tastes like. UNESCO has inscribed it among the heritages of humanity. We serve it all year — because freedom should never be a once-a-year flavor.

Chapter Four — The Feast

Friday night, every night.

Fritay is Haiti's celebration on a platter — the night-market feast where everything arrives fried, shared and loud: plantains, akra, marinad, yucca, griot, and pikliz bringing a heat that makes its own music.

Nobody eats fritay alone, and nobody eats it quietly. Our Fritay Freak piles the whole party onto one plate — and the Fansty and Family spreads were built for the whole table.

Bring your people. We'll bring the noise.

Chapter Five — The Homecoming

A home, away from home.

Houston is a long way from Port-au-Prince — until the first bite. For Houston's Haitian families, Griot Gardens is the taste of home: epis in the marinade, pikliz on the side, a soup that remembers January.

And for everyone else, it is an invitation. Pull up a chair — you're family here.

Flavor that takes you home. Even if home is a place you've never been.
